Healthy Eats: Chicken Fajitas w/Avocado

Prep Time: 20 minutes
Serves: 4

– 4 boneless skinless chicken breasts, sliced into 1-2 inch strips
– 3 tablespoons olive oil
– black pepper
– lemon pepper
– dill
– salt
– 1 garlic clove, minced or garlic powder
– 1 red bell pepper
– 1 avocado, thinly sliced
– 2 scallion, sliced
– 1 cup canned or frozen kernel corn
– 1/2 cup fresh cilantro, chopped
– 4 spinach tortillas
– lime juice or wedges
– 1 jalapeño pepper, sliced (optional)
– 1 tablespoon sour cream (optional)

1 – Season sliced chicken breasts with salt, black pepper, lemon pepper, dill, and garlic.
2 – Heat olive oil in pan over medium high heat and cook chicken for 2 minutes.
3 – Add red bell peppers, corn, jalapeño pepper, and scallion, cook and stir for 3-5 minutes.
4 – Serve over spinach tortillas and add avocado, cilantro, sour cream, and lime.
