Healthy Eats: Avocado Toast w/Eggs & Turkey Bacon

Serves: 2

Ingredients:
– 1 medium size avocado
– 2 slices whole grain toast
– 2 eggs
– 2 strips of turkey bacon
– 1/2 lemon
– 2 tablespoons olive oil
– salt and pepper to taste
– 1 pinch of basil

Procedures:

1 — Boil eggs 10min.

2 — Place turkey bacon in skillet over medium heat and cook until each side is brown, about 5min.

3 — Smash avocado in a bowl, mix in 1 tablespoon olive oil, salt and pepper to taste, and zest of 1/2 lemon.

4 — Spread avocado mixture on whole grain toast, top with turkey bacon, hard boiled egg, and top w/olive oil infused w/basil, salt and pepper, and serve.

Optional: Serve with smoothie — 1/3pear, 1/3 mango, 2 chunks pineapple, 1/2 banana, kale, spinach, and 1 cup almond milk.
